Vegan pumpkin soup for inner balance and well-being

Ingredients:

  • 1 Hokkaido pumpkin (approx. 1 kg)
  • 1 sweet potato (for extra creaminess and nutrients)
  • 1 onion
  • 2 cloves of garlic

  • 1 carrot
  • 750 ml vegetable broth (without additives)
  • 200 ml coconut milk (unsweetened)
  • 2 tablespoons olive oil or coconut oil
  • 1 tsp turmeric (anti-inflammatory)
  • 1/2 tsp cinnamon (balancing for body and mind)
  • salt, pepper
  • 2-4 PURIFY CAPSULES
  • Optional: pumpkin seeds, fresh herbs or pumpkin seed oil as a topping

Preparation:

  1. Preparation : Wash the Hokkaido pumpkin thoroughly (you can use the skin), halve it, and remove the seeds. Cut the pumpkin, sweet potato, and carrot into small cubes. Peel and finely chop the onion, garlic, and ginger.

  2. Sauté : Heat the olive oil or coconut oil in a large pot and sauté the onion until translucent. Add the garlic and ginger and sauté briefly until fragrant.

  3. Cook pumpkin and vegetables : Add pumpkin, sweet potato, and carrot to the pot and season with turmeric and cinnamon. These spices promote inner balance through their calming and anti-inflammatory properties. Pour in vegetable broth and simmer for about 15-20 minutes, until the vegetables are tender.

  4. Purée : Remove the soup from the heat and blend with an immersion blender until smooth. Stir in the coconut milk, return the soup to the heat, and season with salt and pepper.
