
RASPBERRY COCONUT BEAUTY TRIFLE WITH ENERGY BALLS ♥
A while ago, we discovered a recipe on Hannah Frey 's wonderful blog, Projekt-Gesund-Leben (Project-Healthy-Life) , that made our mouths water, and we absolutely wanted to try it ourselves. So, with a slight twist and inspired by Hannah, today we have a BEAUTY dessert recipe for you that's truly addictive :-) By the way, Hannah has also written a very interesting post about adaptogens . And now enjoy the recipe for the RASPBERRY COCONUT BEAUTY TRIFLE WITH ENERGY BALLS:
To prepare it you need the following ingredients:
For the energy balls:
- 60 g ground almonds
- 6 tbsp desiccated coconut
- 30 g organic coconut oil
- 50 g coconut butter
- 1 pinch of vanilla
- 2 capsules ENERGY CAPSULES (optional)
For the BEAUTY raspberry trifle:
- 6 tbsp oat flakes
- 300 g raspberries
- 2 scoops of COCO BEAUTY SPARKLE
- 200 g cream/vegan cream
- 300 g coconut yogurt
- 40 g desiccated coconut
- 1 pinch of vanilla
DIRECTIONS:
- Energy Balls: Place the ground almonds, 4 tablespoons of desiccated coconut, coconut oil, coconut butter, and ground vanilla in a high-speed blender. Carefully open two energy capsules (optional) and add the contents to the blender along with the other ingredients. Blend until smooth. Form the dough into small balls with your hands (approx. 14 soft balls). Then roll the balls in the remaining desiccated coconut. Let the balls set in the refrigerator for about 10-15 minutes.
- Meanwhile, divide the oat flakes between two glasses. For the white layer: Whip the cream and mix with 150g yogurt, 20g desiccated coconut, and ground vanilla. Divide 1/4 of the mixture between each glass.
- For the pink layer: Blend 250g (washed) raspberries with 150g yogurt and 2 scoops of COCO BEAUTY SPARKLE, then stir in 20g desiccated coconut. Pour 1/4 of the mixture over the white layer.
- Spread the white mixture over the red mixture and top with the remaining red mixture. Garnish with the remaining raspberries.
